Well there is no added fat or sugar and no flour so it's all very low cal.
The vinegar is an idea I got from an old recipe book. It said that whenever you include vegetables in baking you should add some vinegar (I've amended my post to say 'Apple Cider Vinegar' now because that's what I used). I'm not sure if it's a flavour or texture thing but the muffins come out nice and spongy. You could add some sweetener to them but I prefer them less sweet.

Well also mine are on the small side of average, that's just the limitation of my muffin tray!
