VEGAN FESTIVE FRUIT CRUMBLE
Filling
* 5 apples
* Tbsp dried cranberries
* Tbsp sultanas
* tsp cinnamon
* Pinch of ginger
* Pinch of nutmeg
Topping
* 2 cups rolled oats
* 1/2 cup oatbran
* 1/2 cup flour (I used buckwheat)
* 1/4 cup sugar or erythritol
* 3 Tbsp coconut oil - melted or softened
* 1/2 tsp salt
* tsp vanilla extract
Method:
Cut the apples into rough chunks, discarding the core. You may peel them if you prefer, but I never do.
Just cover the bottom of a saucepan with water and bring to the boil.
Turn down the heat to a simmer, place the apples in the saucepan, cover and let cook until just soft. Don't worry about the small amount of cooking water; the apples will release liquid as they cook
While the apples are cooking, make the topping:
* First place all dry ingredients into the processor and whiz until the oats have broken up a bit.
* Add all other ingredients and combine until the mix looks like crumble topping
Once the apples are ready, pour them, and the water they cooked in, into your preferred crumble dish.
Sprinkle in the dried fruit and spices, then use your hands to crumble the topping over the fruit/spices
You can let it sit like this until you want to eat it. Then just bake for 20 minutes in a moderately hot oven.
It's also pretty good cold, and can be fancied up with some liqueur and/or coconut cream (or real cream if you are not vegan) for a dinner party dessert.
Maybe only so far as the Waipara Valley vineyards.. ;D

ReplyDeleteI am so making this! I hadn't figured out what to use instead of butter to get a really good crumble topping. Duh, coconut oil, OF COURSE. You're a genius.
