I'm going to admit that it didn't go smoothly. First, I had a little issue with my pre-cooking espresso.

Then, I made a recipe faux pas at the first available opportunity. It's supposed to be 2/3 cups ground nuts and 1/3 cup oats, not the other way around...
I didn't have any cashews either, so used almond meal.
Then I discovered neither Agave nor Maple Syrup in the house, so had to improvise. What I am about to say may be sacrilege, but really, there is not a lot of difference between Agave, which costs $9 a bottle, and plain old sugar syrup, which you can make for.. oh, ten cents, more or less.
1/2 cup of raw, crystalline sugar and 1/4 cup of water (2:1 ratio). Just bring it to the boil, stirring constantly, then turn it down and simmer until it thickens. Then cool it and you have something
gooey, sweet and full of fructose - just like agave, maple syrup or honey.
There is no need to abuse your pancreas AND your wallet.
I considered using honey, but then decided to keep it vegan.
Seeing as I messed up the recipe quantities, I shall direct you back to Averie for the proper instructions and some much better photos, here. These are super energy dense, so I rolled them more the size of large chocolates, than snack balls.
I found a new use for the Sana hygiene gloves too. They are perfect for rolling sticky dough into balls. Cookie dough does not stick to latex. You might want to file that info for future reference.
I took my cookie dough balls out to a Friday night dinner at Mamasana's and by the time I went to indulge myself there was only one left.
Luckily I'd done a bit of quality control before we left.

mmmm cookie dough balls... awesome! I like using almond meal instead of grinding up whole nuts... I reckon the texture is heaps better for this type of treat. Boo to the coffee, so sad!
ReplyDeleteI got almond meal because I was in a laaaazy mood and busy. The only issue I have with it is that it's impossible to get organic almond meal. It doesn't seem to be available here at all.
