My standard mid-morning snack. Yah, there's some carbs, but do I care? Hell no. At 11am all I care about is eating something that gets me through to lunch at 1.30.
Makes 10
170g Oatbran
¾ cup cocoa powder (65g)
75g Xylitol
Tsp guar gum
Vanilla essence
½ cup applesauce (122g)
100g Quarg (the one I use has 9g protein and 2g fat per 100g)
½ cup fresh blueberries (75g)
1 egg
3 eggwhites
Like all my recipes, this one is super easy to make. Combine and mix the dry ingredients, add the applesauce and quarg and mix well. You need to mix the guar with the other dry ingredients or you risk getting guar lumps in the final product – not pleasant. Add the egg and eggwhites. On occasion I have had to add an extra eggwhite if they are small. Mix well. The mix will be quite heavy and sticky.
Spread the mix into a non-stick baking pan and bake for about 35 minutes at an average heat or until it is ‘springy’. Let it cool slightly and then slice it up.
Yay! Another chocolate "thing" from Sara!! I still love the one you invented a few years back, with the apple and strawberries and stuff. People would look at me hoeing into slabs of chocolate cake and say "should you be eating that?" I never told them what was in it, just made lots of "mmmm" noises.
